In the heart of Lima, Peru, there is a restaurant that has not only redefined Peruvian gastronomy but has captured the attention of the whole world: Central, by Virgilio Martínez. This iconic restaurant has been recognized by the prestigious The World's 50 Best Restaurants list, crowned the best restaurant in the world in 2023.
But Central is not simply a place that serves food. It is a biodiversity laboratory, a sensory experience, and a statement of Peruvian identity through cooking. In this article we tell you why Central is much more than a restaurant.
Virgilio Martínez's vision
Virgilio Martínez, founder and head chef of Central, is an emblematic figure of modern Peruvian cuisine. Trained at international schools, his heart has always been anchored in the deep Peru. With a passion for biodiversity and native products, his cooking does not seek to replicate traditional recipes but to explore Peruvian ecosystems through the palate.
Martínez works with his wife, chef and anthropologist Pía León, and with his sister Malena Martínez, who runs Mater Iniciativa, Central's research arm. This team has traveled the Andes, the Amazon and the Peruvian coast to discover and understand ancestral ingredients, techniques and food cultures.
The philosophy of Central: Mater Elevations
Central organizes its menu according to Peru's ecological levels, also known as "mater elevations". Each dish represents a different altitude (from -10 meters on the coast to 4,000 meters in the Andes), with ingredients gathered specifically in that ecosystem.
Examples of this structure are:
- Dry Valley (1,800 m above sea level): with products from the inter-Andean zone.
- Humid Forest (2,700 m): including high-altitude herbs and roots.
- Altiplano (3,900 m): starring tubers such as mashua and oca.
This culinary method turns every bite into a topographical and cultural journey.
Central's iconic dishes
Although the menu changes often, some dishes have left a lasting mark:
- Chuncho cacao and coca leaf: a dessert inspired by the Amazon.
- Maras Stones: a nod to the Maras salt pans with salty, crunchy textures.
- Land of Corns: combining more than five native types of corn.
Each dish is a work of art that not only seduces the palate but also teaches about the origin of its ingredients.
International recognition
Central has not gone unnoticed by the critics:
- No. 1 in the world in The World's 50 Best Restaurants 2023.
- Best restaurant in South America for several consecutive years.
- Recognized for its sustainability and its work with native communities.
These awards recognize not only its culinary excellence but also its commitment to the environment and Peruvian culture.
Mater Iniciativa: science and gastronomy
One of Central's pillars is Mater Iniciativa, a multidisciplinary research center that studies Peruvian ingredients from the perspectives of biology, botany, anthropology and history.
Thanks to this work, the restaurant manages to incorporate unknown ingredients, many of them without a name in Spanish, and give them a starring role on the plate. This work also includes collaborations with communities to revalue traditional knowledge and promote fair trade.
A space that breathes Peru
Central's current home is in Barranco, a bohemian, artistic neighborhood in Lima. The space has been designed so diners live a complete experience: architecture, plants, handmade tableware, music and interior design are all part of the dining experience.
Diners can see part of the open kitchen, as well as part of Mater's laboratory work. All this creates a feeling of transparency, commitment and authenticity.
The experience at Central
Eating at Central is a ritual that can last more than three hours. The tasting menu, made up of 12 to 14 courses, is carefully designed to tell a complete story of Peru, without the need for maps or books.
The waiters and sommeliers are highly trained to explain every detail of the menu, from the ecosystem an ingredient comes from to how it is transformed on the plate. This turns the meal into a living culture class.
Central and the future of Peruvian cuisine
Central is not only an elite restaurant. It is an example of how cooking can be a tool for change. It has inspired young Peruvian cooks to look inward, to the Andes, the Amazon and forgotten communities. It has created a movement of cooking with identity that is being replicated in other cities in Peru and around the world.
In Martínez's words: "Our menu is not static; like Peru, it is constantly changing".
