Peruvian chicken escabeche

Peruvian chicken escabeche is a gem of Creole cooking: crispy outside, juicy inside, and bathed in a red, aromatic sauce that wins you over from the first bite. This dish, full of history and flavor, is perfect for a special meal at home or to surprise your guests with a Peruvian classic that never fails.

Origin and history of escabeche

The word "escabeche" comes from the Arabic sikbaj, an ancient cooking technique introduced to the Iberian Peninsula during the Muslim occupation. It was a way of preserving meat and fish using vinegar, spices and oils. Over time, this preparation was adopted by Spanish cooking and later reached the Americas during the colonial era.

In Peru, escabeche evolved and blended with native ingredients such as ají amarillo and ají panca, resulting in a Creole version with its own identity. Unlike Spanish escabeche, which is usually served cold, in Peru this recipe is served hot and is considered an essential part of the traditional repertoire. Chicken escabeche became a popular classic, especially in Lima and the central coast, where its vinegary flavor and the aroma of oregano evoke the family kitchens of the past.

A Creole recipe with personality

Escabeche is a preparation with Spanish roots that Peruvian cuisine has reinterpreted in a unique way. In chicken escabeche, the key ingredients are ají amarillo, ají panca, vinegar and onion cut into wedges. This combination creates a thick, glossy sauce with a flavor balanced between sour, sweet and spicy.

What makes it special is the contrast of textures: the golden chicken is served with a smooth, enveloping sauce, alongside boiled potatoes, sweet potato or white rice, depending on the region or personal taste. Its intense color and spiced aroma make it a dish that whets the appetite the moment it reaches the table.

The brine technique: the secret to juicier chicken

One of the key steps in this recipe is the brine. By soaking the chicken breast in a mixture of water and salt for 10 to 15 minutes, the meat fibers retain more moisture during cooking. This simple but powerful technique keeps the chicken juicy inside, even after frying, so it doesn't dry out. It also brings out the natural flavor of the chicken and lets the seasonings penetrate the meat better.

How to Make Peruvian Chicken Escabeche

Make the brine:

  1. Dissolve 100 g of salt in 1 liter of water. Submerge the chicken breast and let it rest for 15 minutes. Remove and dry well.

Season the chicken:

  1. Rub the breast with half a lime, season with salt and pepper and add cumin to taste. Ideally let it rest from the day before, but 1 hour is enough.

Dredge:

  1. Mix the flour with salt, pepper and cumin. Coat the chicken in the mixture until completely covered.

Fry:

  1. In a deep frying pan, heat the vegetable oil and fry the chicken until golden outside. Remove and set aside.

Make the sauce:

  1. In another pan, heat the olive oil and sauté the crushed garlic. Add the ají panca and the ají amarillo paste. Cook for a few minutes; ají panca needs to be well cooked.

Add the vegetables and spices:

  1. Add the onion, the ají amarillo strips, oregano, bay leaves, vinegar and sugar. Cook over medium heat until the onion is soft.

Add the broth:

  1. Pour in the 2 cups of chicken broth. Let it reduce slightly. If you want it thicker, add dissolved chuño and cook for a few more minutes.

Adjust the seasoning:

  1. Add salt, pepper and cumin to taste.

Serve:

  1. Serve the fried chicken in portions, with white rice, sweet potato and boiled potatoes. Pour the hot sauce over it and garnish with boiled egg or olives if you like.

🧠 Practical tips

  • Brine the chicken well so it turns out juicier.
  • You can use drumsticks or thighs if you prefer a juicier texture than breast.
  • Chuño is optional, but it gives the sauce a thicker, glossier texture.
  • Escabeche tastes even better the next day, so you can make it ahead.
  • For a lighter version, you can brown the chicken in the oven instead of frying it.

🍽️ Variations and ideas

  • Make a vegetarian escabeche with eggplant or mushrooms.
  • Serve with hard-boiled egg and black olives for a classic touch.
  • You can replace the chicken with fish (such as jack mackerel or mackerel) for a seafood escabeche.

Frequently Asked Questions about Peruvian Chicken Escabeche

Can I make this recipe without frying the chicken?

Yes. You can brown it in the oven or cook it on a griddle for a lighter version. You can also simmer it in the sauce.

Can it be made with other meats?

Yes, escabeche is also made with fish, turkey or even tofu for a vegetarian option.

How long does escabeche keep?

Well refrigerated, it can last 2 to 3 days. Its flavor improves over time.

What are the best side dishes?

Boiled sweet potato, boiled potatoes and white rice are the most traditional sides.

What is Peruvian escabeche?

Peruvian escabeche is fried chicken marinated in a sweet-and-sour sauce of vinegar, red onion, ají amarillo and spices. It is served COLD or at room temperature with boiled sweet potato, olives and hard-boiled egg. It has colonial origins (16th century) as a way of preserving food without refrigeration - the vinegar preserves the meat. Unlike Spanish escabeche (fish), the Peruvian one is mainly CHICKEN. Characteristic flavor: sour from the vinegar + sweet from the caramelized onion + spicy from the ají = perfect balance. Ideal for summer (eaten cold) or packed lunches (keeps several days refrigerated).

Why is Peruvian chicken escabeche eaten cold?

It is eaten cold because of: (1) its ORIGIN as preserved food - in times without refrigeration, vinegar preserved the meat and it was eaten cold days later; (2) FLAVOR - as it cools, the flavors (vinegar, spices, onion) blend better; (3) CLIMATE - Peru is warm, and cold dishes are refreshing. FACT: Although traditionally cold, you can eat it lukewarm if you prefer. Escabeche IMPROVES with time - it is tastier the next day than freshly made (the marinade penetrates better). That's why many families make it a day ahead.

How long does escabeche last?

Escabeche lasts 5-7 days refrigerated (the vinegar preserves it). In fact, it is ONE of the few Peruvian dishes that IMPROVES over days - its flavor becomes more integrated. HOW TO STORE IT: (1) Keep it in an airtight glass container; (2) Make sure the chicken is COVERED by the vinegar liquid (otherwise it dries out); (3) DON'T freeze it (it loses texture). TIP: Make it on Sunday, eat it all week - perfect meal prep. Serve it straight from the fridge (no need to reheat). That's why it is IDEAL for packed lunches, picnics or meals made ahead.

Can it be made with other meats?

YES, escabeche is traditionally made with: (1) CHICKEN (the most common); (2) FISH (corvina, jack mackerel) - the coastal version; (3) PORK (pig's feet in escabeche = a party classic); (4) TURKEY (at Christmas). There is even a VEGETABLE escabeche (carrot, cauliflower) - a vegetarian version. They ALL follow the same technique: cooked protein + vinegar-onion-ají marinade. FISH escabeche is more delicate (less vinegar), PORK escabeche more intense (more vinegar). Choose according to your preference.
