If you love chocolate desserts, you have surely tried a delicious brownie, known for its dense texture and intense flavor. But what if we went for an equally irresistible alternative that is lighter and fluffier? Here is the perfect recipe for a soft, delicious chocolate cake.

To start, here are some tips for a moist, fluffy and delicious chocolate cake:

Use milk soured with vinegar

Using milk soured with vinegar gives you a softer, lighter sponge. This mixture helps create a fluffy texture thanks to the chemical reaction with the baking soda.

Note: If you decide to use regular milk instead of soured milk, the texture may be denser. That's why I recommend following the recipe exactly as written for the best result.

Add brewed coffee Add brewed coffee to your batter! It won't make your cake taste of coffee; instead, it intensifies the chocolate flavor, giving it more depth and an even more delicious taste.

Combine oil and butter Some recipes use only butter or only oil. However, combining both adds moisture to the sponge, making sure you get a soft, moist chocolate cake that everyone will love.

  • Respect the frosting's chilling time; this gives it the ideal texture for decorating.
  • Use pure cocoa and good-quality chocolate for exceptional intensity and flavor.
  • To cut the sponge layers easily, refrigerate it before cutting

Frequently Asked Questions about Chocolate Cake

Can I replace the coffee with water?

Yes, but coffee intensifies the chocolate flavor, so the final result may vary slightly.

What kind of pan is best for this cake?

An 18 to 20 cm round springform pan, greased with butter and dusted with cocoa beforehand.

How long can I keep the cake in the fridge?

Yes, chocolate cake freezes perfectly for up to 3 months. Wrap it well in plastic wrap pressed against the surface, then in aluminum foil to protect it from the air. Freeze it without frosting (add the frosting after thawing). To thaw, take the cake out of the freezer and leave it in the refrigerator overnight, then at room temperature for 1 hour before serving. You can also freeze individual slices so you only take out what you need. Chocolate cakes made with oil freeze better than butter-only ones because oil doesn't harden as much. The flavor and texture stay excellent. Perfect for making ahead for parties.

Does the frosting really need to be refrigerated for 5 hours?

Yes, this makes sure the frosting reaches the ideal creamy consistency for decorating.

What kind of chocolate should I use for chocolate cake?

For an intense, moist chocolate cake, use unsweetened cocoa powder (such as Hershey's, unsweetened natural cocoa, or Peruvian cocoa) and/or semisweet baking chocolate (55-70% cocoa). Avoid milk chocolate, which is very sweet and doesn't give enough chocolate flavor. If you use bar chocolate, chop 200 g of semisweet chocolate and melt it carefully in a double boiler or the microwave. Cocoa powder goes straight in with the dry ingredients. For a super chocolatey cake, combine both: 1 cup of cocoa powder + 100 g of melted chocolate. The result will be a dark, moist cake with a deep chocolate flavor.

Why is my chocolate cake dry?

Chocolate cake turns out dry from overbaking, too little liquid in the batter, or too much flour. To avoid it: 1) Bake at 170-180°C, no higher. 2) Bake only until a toothpick comes out with moist crumbs (not completely clean, and not with liquid batter). 3) Respect the quantities: don't add extra flour. 4) Add moisture-rich ingredients such as yogurt, sour cream, oil (not just butter) or coffee. 5) Don't overmix the batter after adding the flour. 6) Let it cool completely before cutting; the internal steam finishes hydrating it. A chocolate cake should be moist and fluffy, almost brownie-like, not dry or crumbly.

Can chocolate cake be made without eggs?

Yes, you can make chocolate cake without eggs by replacing them. For each egg, use one of these options: 1) 1/4 cup unsweetened applesauce (adds moisture). 2) 1/4 cup plain or soy yogurt. 3) 1 "flax egg": 1 tablespoon ground flaxseed mixed with 3 tablespoons water, left for 5 minutes until it thickens. 4) 3 tablespoons whipped aquafaba (the liquid from canned chickpeas). 5) 1/4 cup mashed ripe banana (it will change the flavor slightly). The cake will still be fluffy and delicious. Vinegar or lime juice with baking soda also helps it rise without eggs.

How long does a chocolate cake bake?

A chocolate cake in a 23-25 cm round pan bakes at 170-180°C for 35-45 minutes. In a shallower rectangular pan it takes 30-35 minutes. Cupcakes take 18-22 minutes. The exact time depends on your oven and the thickness of the cake. To know if it's ready: insert a toothpick in the center; it should come out with moist crumbs but not liquid batter. The surface should look firm and the center should spring back gently when touched. Don't open the oven before 30 minutes or the cake will sink. If it is browning too much on top but the center is raw, lower the temperature and cover it with aluminum foil for the last 10 minutes.

How do I make a fluffy chocolate cake?

For a super fluffy chocolate cake: 1) Sift the flour, cocoa, baking powder and baking soda together twice to add air. 2) Use ingredients at room temperature (eggs, milk, butter). 3) Cream the butter and sugar well for 3-5 minutes until pale and fluffy. 4) Add the dry and liquid ingredients alternately in 3 batches, mixing gently. 5) Don't overmix after adding the flour or you'll develop gluten and it will be tough. 6) Make sure your baking powder and baking soda are fresh (test them with vinegar; they should bubble). 7) Bake immediately after mixing. The key is not to overwork the batter and to bake at the right temperature.
